Raw Cacao Blueberry Tart

With the abundance of delicious Blueberries in season, we can’t seem to resist buying a huge fresh bucket of them every week at the farmer’s market! Although we use them in our daily Green Cacao Superfood smoothies, there’s quite a stash of blueberries leftover each week that we’ve kept in the freezer. So yesterday I experimented with this super easy & super delicious recipe: The simple recipe for Blueberry Pie from the Raw Foods Bible, became the decadent Raw Cacao Blueberry Tart. Mmmm! So quick, but oh so divine. Here’s how:

Ingredients

FILLING

  • 5 cups blueberries
  • 2 bananas
  • 3/4 cup Sacred Mayan Cacao (more or less according to taste)
  • 1 1/2 Tbsp raw honey, agave or coconut nectar

CRUST

  • 2 cups almonds
  • ½ cup dates, pitted & soaked

Method

CRUST

In a food processor, grind the almonds til fine. Add the dates blend til smooth. Remove from the processor & pat down into a pie plate.

FILLING:

In a food processor combine 4 cups of blueberries, cacao, banana & honey. Blend til smooth. Remove from processor & add in remaining cup of whole blueberries to the mix and pour into crust<. Refrigerate for at least 3 hours. The pie will solidify after a few hours in the fridge. And voila! Your pie will have a jelled blueberry filling & mounds of whole blueberries just like a traditional pie! Enjoy.
